Preheat the oven at grill (230°C).

Put oil, garam masala, cumin, salt, and black pepper in a small bowl and stir.
¼ cup oil, 1 tbsp Amapelepele Garam Masala Mix, 1 tsp Amapelepele Jeera Powder / Cumin, 1 pinch of salt, 1 pinch of Amapelepele Black Pepper

Brush the spice oil onto the mushrooms, eggplants and pepper and grill until they are tender-crisp and slightly charred.
250g mushrooms, 3 sliced eggplants, 1 red pepper (seeds removed and cut in half) -
Keep brushing more spice oil onto veggies as they grill.

Once done, cut into bite-size pieces and serve on a platter as a side dish.
