In a large saucepan over medium-high heat, fry onion and garlic until golden. Stir in curry powder and tomato paste, cook for 2 - 3 minutes.
1 chopped onion, 2 crushed garlic cloves, 2½ tbsp Amapelepele Curry Powder, 2 tbsp tomato paste -
Stir in tomatoes, Amapelepele Indian Curry Special Blend, mixed vegetables, water, salt and pepper.
1 can chopped tomatoes, 2 tbsp Amapelepele Indian Curry Special Blend Stock, 1 pack frozen mixed vegetables, 1½ cups water, pinch Salt and pepper to taste -
Cook for 30 minutes or until vegetables are well done.

Sprinkle with fresh coriander prior to serving.
