Preheat the oven to 200℃.

Using a small, sharp knife, cut slits all over the leg of lamb.
1 leg of lamb -
Insert 1-2 garlic slices and 4-5 rosemary needles into each slit.
thinly sliced fresh garlic cloves, rosemary sprigs -
Add all remaining rosemary in a roasting tin.
3 rosemary sprigs -
Season the lamb with salt and pepper to taste and place it in the roasting tin.
2 tbsp Amapelepele Black Pepper, pinch of salt -
Pour the oil over and cover the roasting tin with foil.
4 tbsp olive oil -
Roast the lamb in the preheated oven for approximately 1½ hours.
