Ingredients
  • 1 tbsp olive oil
  • 1 onion (chopped)
  • 2 garlic cloves (crushed)
  • 2½ tbsp Amapelepele Curry Powder
  • 2 tbsp Amapelepele Indian Curry Special Blend Stock
  • 2 tbsp tomato paste
  • 1 can chopped tomatoes
  • 1 frozen mixed vegetables (pack)
  • 1½ cup water
  • 2 tbsp fresh coriander (chopped)
  • pinch Salt and pepper (to taste)
Instructions

    In a large saucepan over medium-high heat, fry onion and garlic until golden. Stir in curry powder and tomato paste, cook for 2 - 3 minutes.1 chopped onion, 2 crushed garlic cloves, 2½ tbsp Amapelepele Curry Powder, 2 tbsp tomato paste

    Stir in tomatoes, Amapelepele Indian Curry Special Blend, mixed vegetables, water, salt and pepper.1 can chopped tomatoes, 2 tbsp Amapelepele Indian Curry Special Blend Stock, 1 pack frozen mixed vegetables, 1½ cups water, pinch Salt and pepper to taste

    Cook for 30 minutes or until vegetables are well done.
