Butter Chicken

  1. Heat oil and butter in a pan over medium-high heat.
    1 tbsp cooking oil, 20g butter
  2. Add onion, turmeric, garlic and paprika.

    1 diced onion, 1 tbsp Amapelepele Paprika, 2 crushed garlic cloves, 1 tbsp Amapelepele Turmeric Powder

  3. Cook for 3-4 minutes, stirring occasionally, until softened.
  4. Add chicken to pan, then cook for 5 minutes.
    850g chicken fillets, cut into pieces
  5. Add tomato puree, fruit chutney, salt and pepper. Cover.
    ¼ cup tomato puree, ½ cup fruit chutney
  6. Reduce heat to low. Simmer, stirring occasionally, for 10 minutes or until chicken is tender and mixture has thickened slightly.
  7. Stir in cream.
    2 cups fresh cream
  8. Simmer for a further 5 minutes or until heated through.
  9. Serve.
