Ingredients
  • 500 g speckled sugar beans
  • 500 g samp
  • 1 tbsp Amapelepele Beef Stock (thickly sliced)
  • 1 tsp Amapelepele Paprika Powder
  • 2 tbsp cooking oil
  • 1 onion (chopped)
  • 3 clove garlic (crushed)
  • 1 cup boiling water
  • 2 l water (for soaking)
  • 2 l water (for cooking)
Instructions

    Soak the samp and beans overnight in 2 litres of water.500g samp, 500g speckled sugar beans, 2lt water

    Strain the samp and beans, place in a large pot, pour in the remaining 2 litres of water and bring to a boil then simmer slowly for roughly 1½ hours or until samp and beans are soft.2lt water

    In a separate pan, pour in the oil and sauté the onions and garlic. Once softened, add paprika and sauté for a further 2 minutes.2 tbsp cooking oil, 1 chopped onion, 3 crushed garlic cloves, 1 tsp Amapelepele Paprika Powder

    Mix the stock and boiling water, add to the onion mixture and simmer for 2 minutes.1 tbsp Amapelepele Beef Stock

    Pour the onion mixture into the samp and beans, stir well and leave to cook on a very low heat for a further 10 minutes.
