Ingredients
  • 1 cup flour
  • 2 tsp baking powder
  • ½ cup brown sugar
  • ½ tsp Amapelepele Cinnamon Powder
  • ¼ tsp salt
  • ¾ cup raisins
  • ½ cup milk
  • 1 tsp vanilla essence
  • 1 cup brown sugar ((for sauce))
  • ½ tsp nutmeg
  • 1 tsp Amapelepele Cinnamon Powder ((for sauce))
  • ¼ cup butter (cut into small pieces)
  • 2 cup boiling water
  • vanilla essence (as needed (for sauce))
Instructions

    Preheat oven to 190°C.

    Grease round-bottomed baking dish.

    Using a fork, combine flour, baking powder, sugar, cinnamon, salt and raisins.

    1 cup flour, 2 tsp baking powder, ½ cup brown sugar, ½ tsp Amapelepele Cinnamon Powder, ¼ tsp salt, ¾ cup raisins

    Add milk and vanilla essence and combine until just mixed.½ cup milk, 1 tsp vanilla essence

    Spoon into baking dish and level out.

    For the sauce, combine brown sugar, nutmeg, and cinnamon in a bowl.

    1 cup brown sugar, ½ tsp nutmeg, 1 tsp Amapelepele Cinnamon Powder

    Add boiling water and butter and stir well until butter has melted. Stir in vanilla essence.2 cups boiling water, ¼ cup butter cut into small pieces, vanilla essence as needed

    Pour over cake mixture in dish and bake for 30-35 minutes.

    Serve warm with ice cream.
